Dark Chocolate Tofu Mousse with Orange and Mixed Berries

Ingredients

Choc Mousse

  • 150 g 70% Dark chocolate baking chips
  • 150 g Silken Tofu
  • 85 g Mascarpone
  • 1 tsp Vanilla Essence
  • 3 tbsp Agave or Maple syrup
  • 2 tbsp Rum
  • 1-2 drops Orange essential oils

Mixed berries jelly topping

  • 120 g Mixed frozen berries
  • 3 tbsp Icing sugar
  • 2 tsp Gelatin
  • 1 tsp Lemon zest

To Serve

  • 1 cup Wild berries rinsed Mint leaves

Instructions

  1. Process the tofu (using an electric blender) until smooth and creamy.
  2. Place a wide saucepan with about an inch of water on heat. Place the chocolate chips in a heatproof bowl (stainless steel or tempered glass) and set the bowl directly in water. Bring the water to a simmer then turn off the heat and let the chocolate sit until it has melted. Remove the bowl of melted chocolate from the saucepan and set it aside to cool.
  3. Exercise caution not to splash the water into melted chocolate, which will cause the chocolate to split.
  4. Pour the melted chocolate and the rest of the ingredients – mascarpone, vanilla essence, agave syrup and rum into the tofu mixture. Add Orange essential oil and blend well.
  5. Using a funnel, pour the mixture into serving glasses, filling 2/3 of the glass. Let it cool in refrigerator while you prepare the mixed berries topping.
  6. Place the frozen mixed berries in a small saucepan over medium heat. Add 1 teaspoon of lemon zest, the icing sugar and about 2 tablespoons of water and let it boil for about 5-8 mins until soft and syrupy. Lower the heat.
  7. Add the gelatin into a cup with 4 tablespoons of water and mix well before pouring the gelatin mix into the mixed berries. Stir to dissolve before turning heat off. Use a strainer to sieve the fruit mixture to remove seeds and any undissolved bits of gelatin. What you want is a smooth, clear jello consistency.
  8. Let the mixed berries jelly topping cool to room temperature before spooning 1-2 tablespoons onto the chocolate mousse.
  9. Let it refrigerate for about 4 hours until set. You may garnish it with some fresh mixed berries (optional) before serving.
